if i make chicken- i will make 10 pounds- dinner- shred the rest pack it up for the freezer- ground beef pkgs too- rice- potatoes- etc- this week (yesterday -it was scalloped potatoes) to add to for quick dinners- so i have veggie/beef soup- like 4-5 meals- potato soup- 5-6 meals- lasagne- about 5 meals- now that i have all these "winter" meals- we broke record highs yesterday and will again today-74 degrees- lol- go figure:-)

I love going out to my freezer in the garage and taking out prepared ingredients for a quick dinner. I think it is so smart to cook things in advance. Doesn't take much extra energy to do a lot of "whatever" and package it for later!

Nanny, I always buy bulk in meats. I do the same as you. So easy to go to the freezer, thaw and heat :)

Nanny129 - I do the same thing - prepare ahead. Yesterday was sooo beautiful but one my grandmother would call, "Pneumonia weather." If you are from the south, you know what that means!LOL

yep- alot of people are getting sick- a few days of cold- then a week of spring like weather-- i work outside daily so hopefully my body is tough enough to get thru this "heat wave" lol-

We have a little tree in our neighborhood that is BLOOMING! In Indiana in December. Poor little mixed up tree.

Interesting! I didn't know you could freeze scalloped potatoes! Do you do anything different to them like cook them until almost done? How do you warm them? Straight from freezer or do you defrost first?

i just defrost in fridge- like if i want them for friday- i take from the freezer to fridge on wednesday- them on friday i just add ham or broccoli or whatever -mix -put in sprayed baking dish & thro in the oven til warm:-)easy meal

Thanks, nanny129. Your advice will come in handy at Christmas. We always have left over scalloped potatoes and now I can freeze the left overs.

Hey nanny,2 staples in my freezer always is broth and spaghetti sauce.Also when i make chicken pot pie,always make 4-5 extra.AS for the scalloped potatoes we never have any leftover,but good to know they can be frozen.Thank you for that.

I love bulk cooking or OMAC which allows me not to stress too much.. I do this with steel cut oatmeal as well for breakfast I will on my days off make a crockpot of this and then freeze them in individual container to pop out & nuke in the am for breakfast..I freeze spaghetti sauce/lasagna/Chicken Pot Pie/Veggie Turkey Meatloaves
