Good morning! I have a flu-stricken 7 yr. old who's been up since 1am. He's now in & out of sleep but I'm wide awake :( Anyhoo, we're grilling these tonight(supposed to be in the 60's today-woot!). I have leftover fried potatoes for the kids & I test-froze some garlic parmesan orzo w/asparagus so I'll pull that out to see if it's any good. I think I have some bread dough/rolls in the freezer, so I'll make those too. In case I'm napping by the time you all start posting, have a great Monday!!

Oh dear, hope he recovers soon. My son, his wife and the grandson all caught the flu right after they were here on Thanksgiving...they are just now getting over it. No fun.

Thanks everyone! Knocking on wood, hoping everyone else stays healthy! I had a flu shot last time I was at the dr's so hoping it's a strain I'm protected from. I ended up waking hubby up at 7(he's home on his last vacay of the year) so I could go lay down. I feel MUCH better now but, wouldn't you know, as soon as I got up, my hubby & son both crashed. Sigh.

Hi, 10.30am here with sun shining but a bit chilly. Tonight a seafood treat. cheers. Steamed Mussels in a Creamy White Wine and Thyme Sauce 1kg/2lb fresh Mussels 30g/1oz butter 1 Red Onion - chopped 3 cloves Garlic - chopped 250ml/8fl oz White Wine 4 sprigs Thyme 250ml/8fl oz Crème Fraiche or Double Cream Salt and freshly ground Black Pepper Handful flat leaf Parsley - chopped To Serve - Fresh Crusty Bread Preparation method Clean the mussels with a soft brush or a bit of the green scrubbing cloth, removing any dirt, barnacles and the beard. Remember the beard; Discard any open, damaged or those which do not close when tapped; Place in a bowl, cover with water and soak for an hour or so, changing water during process; Place the butter in a large pan, add the onion and garlic and for sauté 1 minute or so. Add the wine and bring to the boil; Lower the heat, add the thyme, place a lid on the pan and cook for some 3 to 4 minutes or so until the mussels begin to open; Stirring continuously, add the crème fraiche or cream, parsley and season to taste with salt and pepper; Heat through ensuring the mussels open; Discard any that remain closed; Place pan on table with warm bowls and bread, spoon in the mussels, pour sauce over them and eat.

Good morning, luv! It's going to be warm here too. Women were wearing sandals to church yesterday, and we had trouble keeping the sanctuary cool. Everyone was talking about how hard it is to get into the Christmas spirit with this weather!

Salmon pizza! I made one with a premade crust, spread it with cream cheese, chopped dried tomatoes, bits of fresh salmon and diced garlic, baked it about 7 minutes and added pepper and parmesan - YUM! I made mine yesterday and having the rest tonight with iron-pan steam-fried broccoli and red pepper.

I have my first Chrsitmas party tonight with all the girls in the office at school. Sooooo, I will be going out and hubs will be eating the leftovers of this lasagna. My "meat lovin' / spinach hating" husband really liked this lasagna. I told him his taste buds must be changing! lol
