Blazer is looking for: (2 recommendations)
Went to a brunch today for my cousin's 80th birthday. There was a slice of bread that looked like it was maybe in a cupcake tin with a cooked egg. Wondering how they did that without the bottom getting soggy. Don't know if I am explaining this very well. Does anyone have a recipe? Thanks

Muffin tins are lined with bread and filled with crumbled bacon, an egg, and a sprinkling of cheese, then baked. Add this bacon, egg, and toast cup recipe to your collection of easy brunch recipes for a crowd.

This sounds like it may be what you are looking for. At least the method if not the ingredients.

The method is probably right. There was no bacon, etc. just the egg cooked in the bread. I'll have to try it out. Thanks Connie, I put eggs in the search box and looked through the recipes but I guess I missed this one.

You are certainly welcome. I put " eggs in a bread cup" which I was sure wouldn't work, but there it was halfway down the page. Hope they turn out for you.

These scrambled egg muffins with plenty of sausage and Cheddar cheese make a filling and fun treat at your next brunch. They're pretty, hearty, and fun to serve.

Sounds sort of like a "Scotch Egg", with some sort of parchment paper cup to defend from scorching, but I'm very possibly wrong..
