OK, I have weekend guest coming to visit in 2-weeks. We do not know them and are putting them up for friends of ours who will be out of town. Just found out one is glutten free; but lets it slip in now and then. So food ideas. My menu was for one night - tacos; can she have meat, cheese, lettuce, tomatoes, I guess the shells will have to be glutten free - do they make them. - then the next dinner - steak, potatoes, salad is that ok? - Breakfast - I can buy glutten free cereal; and then I was going to make the Overnight Blueberry French Toast - from here - again bread - ??? Any other idea for something i can make at night and serve the next morning? I have a good quich but then again the pie shell?? - What about good desserts? Any help is really appreciated. Thanks so much.

Layers of canned green chiles and cheddar cheese are baked with an egg filling. This casserole is also great when made with fresh long green chiles. Makes a wonderful brunch dish, but we also have it for lunch quite often.

Just a couple of ideas...first to make a shell for your quiche:
Also, for breakfast: a fast easy and very healthy option is to mix a couple of tablespoons of chia seeds with some hemp seeds and raisins, add a bit of cinnamon, let sit for 5 minutes and you have a plant based superfood. This is similar to porridge. I hope this helps you

You could actually keep breakfast very simple & cheap(er) by sticking w/plain ole eggs & bacon & have the casserole also, if you want, as an accompaniment. Tacos-watch the seasoning mix, it may contain gluten. If they slip once in awhile, it's probably a choice & not a severe allergy.

this is so good. I add the tomatoes and basil as recommended by the submitter. Have fruit as a side. For the tacos you can serve whole romaine leaves to sub as taco shells. We frequently do that and probably something they already do.

Hi Carousel-Lady, these are great questions to ask, you are very caring! So, as a Vegan, Gluten-Free Nutrition Specialist I would love to give you couple of tips that are quick and very easy! I would suggest for breakfast, a fresh and delicious smoothie prepared with a frozen fruit blend of Mango, Strawberries and Peach, two big handful of fresh spinach, 2 cups orange juice and blend everything in a blender until smooth! You can thin this out with little spring water. A second suggestion would be gluten-free oatmeal (it has to say gluten-free on package) You can prepare this at night: Soak oatmeal in enough Vanilla Almond Milk to cover the oats, add cinnamon to taste and honey, cover and place in fridge, the next morning take it out of the fridge and warm it up with just a little bit more almond milk to thin it out. Grate apples to it, add raisins (optional) and enjoy with tea or coffee. There's a good chance that if someone is gluten-free, that they are also dairy free. This is not always the fact but it is very likely! So keep cheese and dairy out of the recipes. So for main meals you could prepare a fall soup with pumpkins or make a vegan chili with beans and vegetables. These recipes keep well and they are so comforting. Also, think salads with grilled chicken (if they eat meat), or make a warm quinoa salad with cucumber, tomato and herbs. I hope this was helpful. Enjoy
