Does anyone know if it's ok to freeze cream cheese frosting? I have to make 6 dozen carrot cake cupcakes and I'm not sure if I should wait to frost them the day I need them or if I can freese them with the frosting on. Thanks for any help

This says you can freeze the frosting. . . . http://chowhound.chow.com/topics/565796 - I would worry about freezing with the frosting on though.

Yes. I have put cream cheese frosting in the freezer before.

I have, too. It loses a little, but it's still good.

You can freeze them with or without the frosting. Make sure you partially freeze before you wrap, though, as otherwise it will get smooshed. You are also better off gradually defrosting (as in, the fridge, or a cold room) or you will end up with condensation on the frosting--although this is more important with fondant than anything else.

I worked in a bakery, and all cakes and so forth with frosting,, were frozen before frosting.

Yes! I did it about a month ago and it is still good! I made to much last time and now I am putting it on my carrot cupcakes! Just freeze the frosting then frost them when you need them

Thanks everyone for the great suggestions. I've decided I will simply frost them when I need them. I have never frosted with a bag and a decorating tip before and will attempt that to save on time. I hope the cream cheese frosting works well in the bag and isn't too thick.

It's fine to freeze frosting. Just let it thaw and re whip before using.

This is my favorite cream cheese butter cream recipe to decorate with. 1 cup butter, softened 1/2 cup shortening 16 ounces cream cheese, softened 3 1/2 pounds powdered sugar 1 tablespoon pure vanilla 1/2 teaspoon salt
