Question about Thanksgiving prep - how far in advance can you make the following items: Pumpkin cheesecake (could I make it several days in advance and freeze?), Lemon-coconut cake (how long can this stay in the fridge?, stuffing, sweet potato casserole (was thinking I might be able to make the sweet potato filling far in advance, keep it in the fridge and assemble the day of). I am especially wondering about the cheesecake as that is my most time consuming item. TIA!!

I have made various cheesecakes in the past and frozen them after it is finished baking. They always turn out fine.

I think cheesecakes taste better after they sit for a few days. I woud make it today or tomorrow with very fresh ingredients (not about to expire) and store it in the fridge with a paper towel on top to collect condensation and wrapped in plastic. I'm not conservative about these things.

This is a delicious stuffing recipe that can be made up to 3 days ahead. Just mix the ingredients together and store in the fridge.

Would depend on your stuffing type and what you put in it but 3 days ahead no problem. I wouldn't put meat in ahead of time. I tweak ingredient amts to our taste.

I wouldn't make stuffing ahead of time if it contains: eggs, broth/stock or meat unless you bake it. Definitely not if you plan to store in the refrig unbaked until Thanksgiving.

I made my sweet potato casserole last week and froze. I plan to put in frig to thaw and then cook the day we celebrate. I also made my coconut pound cake and froze it. Again, I'm going to thaw it in frig and then let it set out probably 24 hours to come to room temp.
