How do you think these would come out if I made today but cooked tomorrow morning?

Form the rolls and refrigerate before the final proof. Remove them from the fridge an hour before baking to bring to room temp and finish proofing. They will rise in the fridge, too, but you want them to be at room temp to bake. They'll be fine that way.

Thanks for the hint of getting to room temp. I was thinking that it might be a good idea :)

I do the same as janet mentioned. You can do that with any of the cinnamon type roll recipes. The only thing you can do wrong is let them finish rising BEFORE you place in the refrig. They are very fragile at that point and will likely collapse in the refrig. Otherwise this method works great and you can have fresh rolls for breakfast.
