I am planning on making some of these (inside) for Christmas gifts but want some without the nuts, so I am looking for a nut alternative ingredient or how should I adjust the recipe to omit the nuts?

you can simply leave the nuts out and maybe 1/4 c. more chips.

I like the marshmallow idea but never made cookies using them. Hope someone sees and can enlighten us both. I like the rice krispie addition that sassy suggests too. Good idea.

Marshmallows melt and leave pockets or holes in the baked dough.

Rice krispies or grape nuts? Something crunchy. I don't know if I would just omit them, 1/2 cup is quite a hole to fill in.

You can omit the nuts without any problems. If you start adding dry ingredients that are flour based you may need to add a bit more fat (eggs/butter) or you may end up with a dry cookie.
