A word of caution. I purchased a box of frozen chicken thighs with back portion attached. Little did I realize how much of the back is included. Just cooked those thighs and cut into one, and it was mostly the back! Very little meat. So read the box carefully if you're buying frozen chicken thighs.

Not that I have anything against the "back attached" thighs, you may also find a bunch of kidnet that has not been cleaned out of the bone structure. You don't get something for nothing (especially in Hawaii!) but equally anywhere else.

I've bought some bad thighs before too at the grocery store in the fresh meat dept. Take yours back and get your money back!

I had the same problem once. I roasted them all and then made a HUGE batch of chicken stock (it really was delicious) *plus* I kept all the meat pick'ns for soups, pot pies, chicken & dumplings, and other assorted recipes calling for cooked chicken pieces. Quite frankly, I got more use out of those backs & thighs!
