I made this earlier today. I just uncovered it to discover that the rice is still pretty darn crunchy. Any way AT ALL I can salvage it? I've made something similar for many years & have never had an issue. Not sure why in the world the rice didn't cook :( http://allrecipes.com/personalrecipe/62502209/cindys-chicken-and-rice/detail.aspx?prop31=2

If all the liquid is already absorbed, I'd add more then cover the pan tightly and bake longer. If there's still a lot of liquid unabsorbed, I'd just recover tightly and bake. It will come around, it just may need more time/moisture or both.

Lisa I can get the photo of the recipe but not the recipe itself. My instincts say to add more liquid. Broth, milk, water, whatever it was. Cover with foil and just bake longer.

i agree; add more liquid, bake longer. maybe transfer the chicken to a covered plate for a while as the rice continues to cook?

Ok I'll add broth & throw it back in for awhile! Good idea about the chicken. I'll take it out & throw it in the fridge(it's already been sitting a couple of hours cooling). Fingers crossed!!

It worked! It's a bit on the mushy side now but that's actually even better for me to digest. Thank you everyone!! It's really good too!!!
