Grandma's Butter Noodles

This is my late mother-in-laws recipe for noodles -- her favorite for flavor and because they don't spring back when you roll them. At every family gathering she'd make the best Chicken and Noodles, dropping her prepared noodles into homemade chicken broth along with shredded cooked chicken, then serving them over mashed potatoes. I've made them many times and everyone loves them. When making multiple batches, and lacking counter space, I hang the rounds on clean plastic hangers to dry.

How long do you dry out the noodles before freezing? Has anyone added any herbs to the noodles. If so, how much and what kind of herbs do you add? I just got a kitchen aid pasta attachment. So, I am excited to use it.

Lela, when i was growing up, my parents made their own noodles,all sorts,we would hang them on broomsticks laying across two kitchen chairs.they would take almost all day to dry enough to freeze.Hope this helps.

Thanks, Manella. Your family must of had a lot of noodles. I will have to think of something to dry the noodles on because I have a dog who would get into the noodles if I used two chairs.

I guess the clean plastic hangers might work.

Hi lela,i'm Italian,so that is what we did, we made all sorts lasagne,tortellini,you name them we probably made them.We did this once a week along with my uncle and his family.I have not done this since i got married,many years ago.Now i buy it boxed.It was wonderful when i was younger,learnt alot and don't regret any of it.You could put them where ever your dog is not allowed.Plastic hangers would work.
