muddyh2os is looking for: (4 recommendations)
My husband hates beans - hates! them! Pinto, black, white, navy - he hates them all. I am making a spicy chicken tortilla type of soup today which calls for beans. It is a simple recipe (ckn, beans, corn, & rotel). Any ideas on what I can substitute (or add in) for the beans? It will be a thin soup if I simply omit them.

Brown rice? Barley? Bite sized sweet potato?

Maybe toss in some rice, or a bit of pasta. I think that would take on the flavors of this dish just fine.

Lemon juice brightens the flavors in this chicken, corn and salsa soup seasoned with cumin and chili powder. Garnish with tortilla chips, grated cheese and a dollop of sour cream.

you could put them in the blender,make them smooth then add in your soup.

I also dislike beans - I quite often substitute canned corn, and diced potatos. You can also add some red or wild rice.
