Hi everyone, I am curious what cut of beef is used in the store when they have cubed beef stew meat, I was wondering if a sirloin roast would work and I would cube myself?

I would rather buy a roast and cube it myself, then I know what kind of meat I have.

It would work better. cubed stew meat is cuts of meat leftover from trimming other cuts of beef so you really don't know what you are getting. cutting your own from a quality piece of meat in my opinion is better and what I do.

Sirloin does not stew well, you should use a chuck roast or one from the front quarter, the coinnective tissue will break down and become tender, where sirloin becomes tough with long cooking.

I buy sirloin when it's in the clearance section. Not to disagree with chairlifter, but we loved it. That pre-made stew meat is so grissly and gross, IMO.

I also use a "Chuck Roast". Make sure its not too lean and has some fat as it will melt down.
