ibbz is looking for: (2 recommendations)
Put together some chicken and black beans and corn and a mushroom sauce with a few extras. Intend to make an enchilada type casserole with corn tortillas. Here is my question. Should I heat, cook, the corn tortillas first, slice? I just want to layer my mixture with these, top with cheese and bake. I am unfamiliar with corn tortillas.

try this. it tell how to warm the tortillias. you have to strike a careful balance of oil. i get another pair of hands in the kitchen to help.

i don't pre cook mine when i make a mexican casserole- just kinda mexican lasagne:-)

If you are going to ROLL the tortillas, you need to warm them, or they will just crack on you. If you are going to LAYER them, no need to warm them first. [As long as you are baking your end product!]

For rolled enchiladas I do fry first. For my green chicken enchilada casserole I do not fry first. Zip thru the white corn tortillas with pizza cutter, toss with chopped onions, cheese, sauce, etc. Dump and bake. Resist adding too much sauce as once baked the onions, cheese other additions let out enough moisture. If you add too much sauce it gets mushy. I top with more sauce to serve.

I have a pan of shredded chicken, corn, black beans, a mushrooms sauce, onions, garlic and some seasonings. Should i just shred up those corn tortillas, mix it up, bake and serve.
