Stir-fries are forgiving. Use what you like (chicken, shrimp, leftover pork) and add your favorite veggies (brocolli, asparagus, fresh green beans)

I make this soup every Halloween and is the 'signal' to the family that the cool weather has arrived. I've been making it for 15 years now and out of all the soups I make, it is still everyone's favorite. Enjoy!

I do many 'quick' soups. I like to use those cartons of fat-free, no MSG chicken or beef broth... We like many kinds of soups. Instead of 'cream', I use nonfat milk (yes), and it is still delish (in many of my soups where it calls for thick cream... )

Using a large muffin pan allows the mini meat loaves to cook faster and makes portion sizing easier, plus your kids won't know you hid some veggies in there too!

Use your favorite cheese. These cook faster because of their size. You could also use lean ground turkey.

This is the best Chicago-style pizza that I have ever had. Make sure that you use the Parmesan in hard triangle form. It tastes so much better when you grate it yourself.

So many ways to make quick pizza (yum)... For a base, I have used lightly toasted English muffin halves (brushed lightly with EVOO), or those 'Grands' refrigerated biscuits (it has been a while, but I flatten them, and cannot remember if I parbaked them before adding the toppings...) French bread pizzas can be delish also... my DH likes me to 'scoop out' the soft bread part (he is like that. LOL). At least, with pizza, everybody gets what they want (cheese, meat, veggies, mushrooms, par-cooked bulk Italian sausage... I avoid pepperoni because some is 'greasy'...

Onions are optional. I do not usually use cheese, but it sounds sort of interesting. You can always 'speed up' by making it stovetop (I like mine baked)... If you do not have tuna, make baked mac 'n cheese (so good... )
