How to keep potatoes and onions and ginger? We are having to start going to Helping Hands and not into Keene to the Community Kitchen to get our food help each week. The gas just cost way to much! At Helping Hands they do not give out fresh produce. They do give it out at The Keene Community Kitchen. So, we have a bag of potatoes and onions and ginger and plan on buying more tomorow. But how can we keep these things longer? It has started to cool off and we have had frost so the temp may help?What is the best way to store this stuff?

Keep potatoes away from direct sunlight and in the dark. That way, they won't sprout easily. I store my potatoes in a paper bag and have a clip at the top to close the bag. As for ginger, I just keep mine on the counter. They won't go bad, really... Although I have heard of people storing ginger in the freezer. You might want to try that... Not sure about onions. I would think that dark is better too so they won't sprout?

As merlion says , keep the spuds and onions in a cool , dark place . Away from each other is best , as they seem to react together , and will spoil faster . With the ginger , I keep it un-peeled , wrapped in foil , and in a zipper bag in the freezer . It will keep for a very long time that way . When you want to use some , just cut off what you want , peel , and use as you like . Re wrap the rest of the root , and return to the freezer . Hope this helps . lump . :)

When I have to many onions I dice them up and freeze them. Did that with 5 today that I thought I wouldn't get used in time. Then when you need onions for cooking just grab some. Makes things go faster. Love froze onions when I'm in a rush cooking. they keep along time.

Haven't tested it, but I've heard you can put onions in women's stockings/nylons. It said to put one in, tie it off, then put another, tie it off, etc and let them hang in the pantry or a cool place and supposedly they keep for months...!

I always store my onions and potatoes in the fridge. Seems they keep forever. An added benefit.....cold onions won't make you cry!
