Thank you all for the thermometer recommendations, I'm gonna splurge and go with the thermapen. Another question (I haven't bought a few essential items in a while and mine are at the end of their life) What are good inexpensive bakers half sheets. I use mine for everything and am a bit rough on them. LIke cutting things directly on them, I just threw one away because it had some ridiculous greesy/sticky substance that no amount of soaking removed) I use parchment paper or a silpat when baking so the least amount of things that they do is actually bake. I use them for meats, roasting veggies, broiling remkinds on, etc. Thanks!

I don't know if this link will work. Sam's club sells a 2-pack of aluminum half-sheet pans for around $10 and they're quite good.

It didn't even occur to me to check Sam's club! Thanks so much. That is the perfect price for how many I want to get (I wanna use them to chill/freeze/warm individual appetizers for Thanksgiving this year) And sadly, I'm down to 1 half sheet, 2 warped/scratched air-bakes and 1 air bake that no one is allowed to touch "CAUSE I JUST BOUGHT THIS ONE FOR 20 DOLLARS AND DON'T YOU DARE COOK AND SLICE YOUR PIZZA ON IT"

I would go with the ones from Sam's and a whole lot of parchment. Enjoy your thermopen. You will love it!

I bought a case of flat parchment, I don't know how long ago - but I am still using it and I would recommend this site to anyone.

If you have Smart and Final in your area they sell boxes of full sheet parchment 1000 ct. Most home cookie sheets are half sheets or smaller,t so you get 2,000 uses for about $35. Been awhile since I bought my last box, too.

Do you have a restaurant supply store near? Might check there for price on the pan and the thermapen.

Like Marie C. - I bought my last box of parchment - full sheet at Smart of final - but they are not everywhere. But that is the way to go!
