i have a TON of thai basil growing in my garden. i have 2 lovely skin on (but easily removed) boneless chicken breasts. hit me with your favorite recipe where i can use a substantial amount of this thai basil. your own, or published. thanks all! :-)

I made this last night and it was delicious! I did use different herbs to use what i had (rosemary, basil, mrs dash herb blend0 and used about 3 tbsp of garlic. I also seasoned the meat with cajun seasoning and a touch of lemon pepper. I also cooked a whole onion with it bc I didnt read the ingredients right. I added 3 tbsp of melted butter and a can of mushrooms to the pan. Cooked covered for 30 min then uncovered for 20. My hubsband couldnt stop raving about how good it was. Tonight with the leftovers I am making gravy with the pan drippings and pour it over some ratoni pasta and shred the leftover chicken to go in it.

sorry, I missed the thai part of your request. But I think I grew some Thai basil this year, the species with the purple stem and I think I would try some in a small batch of pesto. this recipe easily scales. Cut it back to 1c. basil and try it out. This pesto is much more delicate with the pecans. I prefer it over pine nut pesto.

I made a second batch of basil pecon pesto and made this pasta. I added blanched broccoli florettes and reconstituted sunup dried tomatoes cut into strips. Family loved it.

This was also really good. I would add way more basil then it calls for. This is my review Very good. Made a few changes. Seasoned my chicken with Tonys then cooked it. When it was done I added the oil, butter and chicken broth to the pan and I added about 8 sliced mushrooms and 4 cloves of garlic, minced and let them cook then added the herbs. I used much more basil and rosemary instead of parsley (I just dont like it). Then I added a cup more of the broth and mixed cornstarch in it to make a thicker sauce and served it all over pasta. This was wonderful. The mushrooms really make the meal.
