Ingredients: 4 c apples (I used 4 overripe galas), 2 eggs, 1 c white sugar, 1/2 c brown sugar, 1/4 c melted butter, 1/4 c oil, 1/2 c unsweetened applesauce, 1/2 tsp vanilla extract, 1/4 tsp rum extract ---- 1 c AP flour, 1 c WW pastry flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/8 tsp nutmeg, 1/8 tsp allspice, 1/4 tsp salt ----- 1/4 c brown sugar, 1/4 c white sugar, 1/4 c WW pastry flour, 1/2 c quick oats, 1/4 c butter. Directions: Preheat oven to 350F. Spray 13x9" pan with baking spray. Core apples and slice thinly, then chop crosswise into bite-sized pieces.
In KA bowl, beat eggs with sugars until well combined. Add oil, butter, applesauce, and extracts; mix well. Stir in apples.
In a separate bowl, whisk together flours, baking powder and soda, cinnamon, nutmeg, allspice and salt. Add dry ingredients to apple mixture and stir to combine. Spread batter evenly into prepared baking pan.
Mix first four topping ingredients in a small bowl. Cut in butter until crumbly. Sprinkle over top of cake.
Bake 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Cool at least 10 minutes before cutting.
