Hey, I could use some ideas for a dinner where the guests will be a vegetarian (not entirely vegan, but edging that way), an enthusiastic meat eater who's not big on vegetables, and a couple of generally picky kids. Thanks!

Try giving extra flavor to pasta by boiling it in the same water used to cook broccoli. Combine the pasta and broccoli with sauteed garlic and Parmesan, add salt and pepper to taste, then serve!

Maybe two pasta dishes using the same kind of pasta, just two sauces ... one without meat and one with.

That's a great idea! I was going to say 'make reservations'. Which I know is not at all helpful but this sounds like quite a challenge!!

These are so yummy, I made with sausage, no tofu. You could do some with meat, and some without.

...maybe just skip the word "eggplant" with the kiddos!

Pasta would seem to be the answer. The sauce could be wholly vegetarian, the noodles very light (Capellini?) to work into this. For the meat eaters, you could do meatballs on the side, which strikes me as being sort of on the bubble of fairness, in that you aren't keeping the vegans from the showpiece (which might be the case with offering shrimp, crab, lobster or steak or scalopini with your pasta) Fresh grated asiago or whatever on the side, that the vegans can ponder as an individual issue? A dash of Vodka or red wine into the pasta sauce does sweeten it up a bit (I prefer the wine), don't be afraid of using hot peppers. My thought only.

'This recipe is a favorite of my vegetarian friends,' writes Virginia Anthony of Blowing Rock, North Carolina. 'I lightened it by using egg substitute and reduced-fat cheese. I also added a few more vegetables.'

This is really delicious, and even my Carnivore husband loves it. I add a lot of extra garlic, and use more veggies than called for, and I sprinkle fresh basil in each layer as well. I also do a layer with spinach. I make my own sauce, but you can use whatever tomato sauce is easy for you.

Sounds like pasta is going to be a good choice for all. You can make meatballs for the meat lovers and most kids like both. Serve with garlic bread and a simple salad.

I love Mexican food, but I'm always looking for ways to make it more healthy. I 'renovated' a dish that I have enjoyed in restaurants to suit my taste and lifestyle. --Christie Ladd of Rockville, Maryland

You could do something like this. Although vegetarians will eat pasta it is not a go to meal for most.

Not sure if you're in the mood for Tex Mex but this recipe my husband use to call the beef skillet thing, not knowing that it was meatless. *** http://allrecipes.com/personalrecipe/62468885/taco-black-bean-skillet/detail.aspx

This is good but does use a lot of prepared ingredients. I've only made it once and like it but think it would be also be good with mushrooms or additional veggies.

Maybe make a big arranged salad with lots of veggies, cheese choices, bread and then a meat option on the side.
