In an oatmeal cookie recipe from another web site, one reviewer mentioned substituting the corn syrup with molasses or maple syrup. What's the difference? They are all sugar products. I have a low tolerance to sugared products and usually substitute white sugar in a recipe for Apriva or Splenda. I purchased corn syrup and molasses to use in recipes, but am not familiar with either one so your help is needed. Thanks in advance.

Molasses is what you get when you separate the brown/cane sugar and refine it. I agree, different sugars have different levels of sweetness. Always taste the sweetener before you use it for baking so that you know what flavors it will add or if you will even like it. Be careful, honey, molasses and maple syrup all have distinct flavors that can either complement or ruin a recipe. Hope this helps, happy cooking!
