A local Mexican restaurant (Gringo's) makes the BEST chicken tortilla soup, and I need the recipe for poker night! It's a clear, broth-based soup, with yellow squash & zucchini pieces, corn cobs in 1" rounds, shredded chicken, and it's served on top of seasoned rice with lots of cumin. Any AR ideas for me? I don't want a tomato-based broth, just chicken...sorry to be a pain! TIA!

Tired of plain old Chicken Soup? Try this spunky Mexican inspired masterpiece. Adding the avocado is a must! We also add a little grated cheese and crushed tortilla chips.

Wow, that sounds like a soup I've been looking for. My Step-Mom was from Mexico & made a soup with whole corn in it, it was so delish! Wish she was still around!

It is very good! Try the Caldo del Res...soup recipe on here, it is wonderful and very authentic.

A flavorful, meaty chicken stock is served over sauteed vegetables and fried cubes of potatoes in this stew seasoned with epazote, cumin and oregano. Garnish with avocado, tortilla chips and grated jack cheese.

This is an extremely hearty and satisfying soup, made from scratch with beef bones, cabbage, potatoes, corn, chayote, and cilantro. Garnish with slivered raw onion, lime juice, jalapenos, and more cilantro.

OH, OH, I made this one!! Made a double batch for a cooking club party and it was fantastic. Watch out though, just a single recipe is big!
