Pea Salad I

How could something so tiny be so good. But the peas in this layered salad have a bit of help. There's also crumbled bacon, Romaine lettuce, Cheddar cheese, sliced hard-boiled eggs, and a sweetened mayonnaise sauce. Chill and serve to eight.

Sorry...Spring Break here plus I've caught the crud from hubby. Sleepy girl today. We're having leftovers here. Ham sammies, layered salad, deviled eggs. I hope everyone had a great weekend...make it a great Monday!! OH, DD is headed to the chiropractor for her consultation today. I sure hope this is the right route!! Wish us luck :)

This recipe is quick and easy - good for those nights you don't have a lot of time to prepare dinner. Chicken breast is simmered in a lemon-lime marinade, then served with taco fixin's so that everyone can make their own soft taco.

Lemon-dill chicken and leftover veggies...broccoli and Brussels sprouts. Going to make a pot of tomato Parmesan soup for Tuesday as well.

Looking forward to it. My dill looks great, but never lasts long in the Texas heat, so I like to use it fresh while I can.
