Good morning! I haven't quite decided what sounds good yet. I made these muffins lastnight & they're really good. I know, shocking that one of Chef John's recipes are good, right? :)

These, in my opinion, are the best blueberry muffins ever! The batter is beyond delicious....I really hope I have some blueberries in the freezer because I really want them now! Or I can just take a road trip to Lisa's!

They're pretty good, very basic. I have to say, I'm a lazy baker so this was a bit fussy for me....mix, whisk, stir, blah, blah, blah. I prefer to use 1 utensil to do it all :) I also made "To Die For Blueberry Muffins". Those are really good too but I had to cut them out of the muffin tins & they're in pieces. There may have been some cussing going on & objects flying but no one was injured during the baking of these muffins. I'm torn, really, as to which I like better taste wise, tho. John's are "just" muffins, while the others have that yummy crunchy cinnamon topping...I'm a sucker for cinnamon plus the actual muffin(to-die-for) are actually more moist than John's. I'll have to try another of each to really decide.

Lindsay, yes cook the whole chicken. If you only have breasts or legs that will do as well but do not cook as long.

Mediterranean Chicken with Mushrooms 8tbsp Extra Virgin Olive Oil 1tbsp plain Flour- for thickening plus Flour - for dusting 450g /1lb Chicken Thighs - skinned and deboned 45g/1½oz Pancetta - finely chopped 1 clove Garlic - finely chopped 150g /5oz whole small Onions - or Shallots - peeled 1 Leek - finely sliced 1 Carrot - finely chopped 1 stalk Celery - finely chopped 2tbsp Red Pepper - finely chopped 300g/10oz Button Mushrooms - halved 2 large Tomatoes - peeled, deseeded & sliced 200ml/7floz dry White Wine 500ml/1 Pint Chicken Stock 1tbsp fresh Thyme Leaves - finely chopped 1tbsp Oregano Leaves - finely chopped ½ tbsp Rosemary Leaves - finely chopped 2tbsp fresh flatleaf Parsley - divided - 1tbsp for Herb Mixture - remainder for garnish - finely chopped 1tbsp Crème Fraiche (or double Cream) - or to taste Salt and freshly ground Black Pepper Heat six tablespoons of the olive oil in a frying pan over a medium heat; Sprinkle some flour onto a plate, coat the chicken thighs in the flour, shaking off any excess, and carefully place into the hot oil; Fry the chicken thighs for 4 to 5 minutes on each side, or until golden-brown on each side; Remove the chicken thighs from the pan and set aside to drain on kitchen paper; Discard Oil; Add other 2tbsp oil to the pan, add the pancetta and cook gently for 3 minutes until golden but not crispy; Add the onion, leek, red pepper and garlic and cook for a further 1 minute; Add the mushrooms, carrot, celery and tomatoes and continue cooking for a further 5 minutes or so until all slightly softened; Sprinkle 1tbsp flour over the mixture and stir continuously for a minute to mix well; Add the wine and stock, bring to the boil, reduce heat and gently simmer for a further 5 minutes to slightly reduce; Return the chicken to the pan, sprinkle over with the mixed herbs and season to taste with salt and pepper; Heat until simmering, then simmer on a gentle heat for some 20 to 30 minutes or so, or until the chicken is cooked through and tender; Stir in the crème fraiche and sprinkle over the remaining parsley.

Just use the Chef John blueberry muffin recipe, but instead of the blueberries, add chocolate chips~YUM! :)

We grill most meat, not big on frying anything but when I got the new range I swore I was going to learn how to cook meat in the house :)

That does it! I just pulled ground beef out of the freezer. I'm going to copy you but I'll make these for the guys & a regular patty melt for me & my daughter(not fans of chipotle). I think I'll just make fries w/them.

Sounds great, Lisa! I love spicy so I'm all about the chipotle. Or the jalapeño. Or whatever heat I can find. We're not having these tonight after all. I need to work late and my husband is going out with friends, so we're getting a pizza.

I tried to post this one, I'll be hitting the grocery store today, but think this for dinner, have a bunch of mushrooms that need to be used up. I get my new glasses today, so excited, mine are so old looking.

Oooo, Sherri, I'm so jealous! I need to make an eye appt. soon. I'm planning to get new glasses this year too but I also think I want to try contacts. And if I can talk hubby into it, I REALLY want prescription sunglasses. Oh how I miss wearing sunglasses, especially when I'm driving!!

Ok. So, it just occurred to me that you COULD mean DRINKING glasses. I assumed the kind you wear. What kind of new glasses are you getting, anyway? lol. And just excuse all of my babbling :)
