Breaded Chicken Fingers

These garlicky, lightly breaded chicken strips just require a buttermilk marinade before a quick saute. Teamed with your favorite dipping sauce or served alone, these put store-bought chicken nuggets to shame.

How can you tell if buttermilk goes bad?

lisa
Jan. 25, 2013 2:43 am
If you let it go long enough, it turns green. lol. I have to check the exp date. I don't use it much past the exp date, even tho it hasn't been opened. I throw out more buttermilk than I use. I'm hopeless.

Do you ever use the dried buttermilk powder? I used to keep it around, but the humidity was so high at my last place of residence that it would cake, and I didn't ever think to put it in the freezer. Haven't bought any here. The kitchen remodel guy is supposed to be here in April, so I'm trying to limit myself to essentials.

Have you tried the powdered? Maybe you wouldn't throw out as much if you are mixing up what you are using . . .

No, I've never even heard of it. Where would I find that & what do you mix it with? I know I could do the milk/vinegar thing but IMO, it's nowhere close to the same thing. At least, the consistency of mine is never like real buttermilk.

I always use the powdered buttermilk and keep it in the frig. If it gets a little hard, I just make it in advance and then beat the living daylights out of it with a mini whisk. I can't live without the stuff :)

Funny, I can't remember if it's with the powdered milk or in the baking aisle. It's in a can like the small crisco can. I've never bought real buttermilk so I can't say if it's the same but you just mix with water.

WalMart carries the dried buttermilk powder. I also freeze leftover fresh buttermilk to use in a recipe. I don't drink it...don't think I've ever tasted it, actually.

Sherri I grew up drinking buttermilk so no you aren't alone. It's very good for you and low in fat contrary to popular belief! I keep both the liquid and powdered around. The powdered I use for ranch dressing mix. I've always stored it in the frig. I've never had buttermilk turn green but have seen it become more like sour cream or cottage cheese than buttermilk.

lisa
Jan. 25, 2013 6:27 am
Yes, Sherri, you ARE the only one who drinks it....weirdo ;} Thank you, linda! I'll look for it on my next shopping adventure. Maridele, I think it was last year(or maybe the year before), I had some in my fridge that was QUITE expired. Very green when I poured it out & it was hilarious cuz it was right around St Patrick's Day. I got teased just a bit for that one :)

kroger has it if you have kroger- by the powdered milk- evaporated milk- pudding mixes & such- love using it- yes keep it in the fridge:-)my dad & grandpa drank bulgarian buttermilk- you almost had to spoon it out of the container- with salt - black pepper- cornbread and green onions- all crumbled & mixed in a huge glass-lol

Your January and February sound like mine used to, Elle! Mine started in November with my daughter's birthday, then the holidays, then my other two kids' and Mom's birthdays in January, then mid-Feb, Valentine's Day, our anniversary, and my ex's birthday were 2/14 and 2/15. I couldn't wait to get past Valentine's Day! [Which this year is "Black Thursday" - and, I am not bitter =D]

Good morning, Bon Appetit. I have everything except the Red Indian pepper, which I doubt I'll find within a hundred miles of here, and habeneroes. Is there a good sub for the Red Indian pepper? Or would the dish suffer if I just left it out?

Is chili pepper close enough? Or is there a distinct difference in taste.

I'm hoping for pizza. If DH grills, he'll probably invite company and it can be very difficult to be civil at the end of a long day. Plus I'll have to pull some food out of thin air to serve with it. It's supposed to be in the fifties today, so I won't be surprised if he's grilling when I get home. I have potatoes, and plenty of frozen vegetables...guess I should be making a backup plan.
