So behind today and all the time lately! I keep making menus and not sticking to them. We've had SO much going on lately that keeps us from being home together at night...and it's just the two of us. My husband is starting a heavy travel schedule this week, so many of these meals probably won't happen either...I tend to end up eating eggs or whatever when he's gone. BUT...I'm going to put either this or the next recipe in the crock pot before I go to work today. Yes, I teach kindergarten, but I'm working on a Sunday!

Made a batch of chili yesterday for my parents...will take it to them today or tomorrow. Best chili ever, imo!

Chicken breasts are coated in a pecan breading, and fried in a skillet. Then a rich bourbon sauce is poured over them before serving. This is a fabulous recipe that my Mother gave me from a upscale restaurant in New York. It is to die for. ENJOY!!

This one night before my husband leaves, with a green veggie and baked potatoes. He got a super great bottle of Texas bourbon for Christmas that I'm going to use for it. Sounds really yummy to me.

Wow that does sound good! Sounds like a perfect romantic dinner! This might be a good choice for me the next time the kiddos stay at grandma's :)

White rice, garlic and onion is cooked in a nice vegetable stock for about 20 minutes. Black beans, cayenne and cumin are added to the pot, given a stir ...and that's it. Black Beans and Rice for six.

These fries are a healthy alternative to the old standard French fries. The Italian seasoning and lemon pepper add an interesting twist to this vegetable.

Do you usually bake sweet potato fries, Godzilla? I ask because I haven't been able to get them crispy...they taste fine, but I want the crunch of fried. I've taken to buying frozen sweet potatoes fries because they are crisp!

The thinner you cut them the crispier they'll be, but I still can't get them as crispy as a regular fry. But they taste so good!
