I agree, Brenda. Took me a long time to try a fish taco. But they sure are good. Looks like a couple of good recipes.

Try Del Tacos, if you ever get the chance. Not expensive, if you end up not liking it (= Grab a bean burrito, just in case, and if you like the taco, you have a burrito for lunch the next day (=

Sweet and spicy rub for pork tenderloins. Just coat, let stand for 20 minutes and grill! Goes great with polenta or mashed yams.

This is the very first recipe in my box. I put it there in 2007 and have never made it. We are finally having it tonight with some modifications. It will probably be baked unless my husband feels like grilling. I used Chipotle seasoning instead of powder because that is what I found. I only used 1 1/2 T of it. I, also, bought ground Chipotle powder, but read in the reviews that that is not the right thing. Hope it turns out. It has been a long time coming.

I actually made the two recipes, listed below, last night. Unfortunately, I was unaware of the lengthy process when I tried to submit them. At any rate, if anyone is interested in a recipe for beans and rice or curry chicken, feel free to give my versions a looksee...:) Fair warning, these are not quick and easy recipes in the least. But I think they are worth my time it takes to make. Hope you enjoy!
