Hi, chilly for us --- a mean 14c/57f. SO, this simple warmer with basmati rice. cheers. Mediterranean Chilli Beef 300g Minced Beef 45g/1½oz Pancetta (or unsmoked streaky bacon) - chopped 2 tbsp Extra Virgin Olive Oil 3 cloves Garlic - finely chopped 1 large Onion - finely chopped Dried Spice Mix of 1½ tsp Paprika, 1tsp Oregano, ½ tsp Coriander, ¼ tsp Cumin, ¾ tsp Chilli Powder, ¾ tsp Cayenne Pepper 1 x 170g tin Tomato Puree 2 x 400gr/14oz tins Italian Plum Tomatoes - chopped 1 x 400g/14oz tin Red Kidney Beans - in Water Liberal splashes of Worcestershire Sauce - to taste To Serve: Rice - Pitta Bread - Baked Potato Method Heat oil in a large pot/pan, add pancetta and cook gently for 3 to 4 minutes until bacon is golden but not crispy; Add Onion, Garlic and continue to cook gently, stirring occasionally, for some 3 to 4 minutes or so until the onions soften a bit; Add spice mix, combine well with onion mixture and cook, stirring continuously, for further 1 minute; Add mince and, stirring continuously, break down and brown slightly for 4 to 5 minutes or so until NO LUMPS; Add puree, stirring in quickly to avoid burning; Add tomatoes, Worcestershire sauce and kidney beans, stirring continuously to mix well; Bring to boil, reduce heat and simmer, stirring occasionally, for about 45 minutes to an hour.

White (BASMATI) Long Grain Rice White long grain rice is easy!!!!!! - Forget what it says on packets. The secret is to reduce the starch in the rice; rinsing and draining twice, once before cooking and once after cooking readily achieves this I prefer Basmati for perfumed smell, flavour and taste. 180g/6oz White Basmati Long Grain Rice ½ to 1tbsp Salt - to taste 25g Butter Pour rice into a sieve, rinse thoroughly in COLD water and drain; Fill a large pot to ½ to ¾ with cold water, add the salt and butter and bring to boil; Add rice, stirring well to avoid any sticking, the butter helps in this respect; Cover, bring back to boil and simmer for some 10 to12 minutes or so until rice is soft but still has a slight bite; Meanwhile boil water in a kettle; When Rice ready, drain in sieve then RINSE with BOILING water from kettle and allow to drain again; Stir with fork; Stick free rice

They said colder here to, but then said up to 70's, so ten degrees colder. :) But I do see down to 46 in a couple I'm ready to make chili.

I cannot wait to get down to Florida. So bummed that we didn't get to come down in Nov but we're shooting for May now. I just need to check my daughter's school schedule to make sure there's nothing uber important going on. I already bought 5 day Disney Park Hopper passes, which is the most expensive part of the trip(eyeroll)....still need to "discuss" transportation w/hubby. DD & I do not like to fly but it sure would be nice not to be in the car that long.

I never had any desire to try fish tacos - ever! Someone brought extras to work from Del Taco, to share, and I was convinced to try one. I hate to admit that I really, really like Del Tacos fish tacos! Just seems wrong ;) I truly enjoy trying grilled fish tacos at different places now, on a quest for a healthier version. I do like the grilled ono healthmex version at Rubio's - and two have approximately the same calories as one of their regular tacos!

I thought they'd be gross too but they really are pretty good! My husband orders them a lot when we go out.
