Good morning! Well, my night lastnight did NOT go as planned. My daughter wasn't hungry at lunch time so decided to come home from school & eat the rest of her lunch, therefore not wanting dinner. My youngest also came home "starving" & begged & begged for spaghettio's until I finally gave in....no dinner necessary. My oldest son "forgot" to tell me the band was providing pizza lastnight after a school board appreciation dinner performance he played for....no dinner needed. It ended up just being me & hubby so pork chops are tonight. The good news is that my seasonings are mixed up & the mashed potatoes are made :) Have a great day!!!

That was me on Saturday. I made a whole taco feast. The kids and hubby went to grandma's house, they ate a bunch of snacks there and weren't hungry. So, we had leftovers Sunday since only me and the 1 year old actually ate any dinner.

Yes, it's kinda of a nice way to be able to stretch the groceries but I had produce I was planning to use for dinner tonight that's not going to get used now...unless I get creative. It's a use it or lose it situation :) It's mot a lot, money wise, but I still hate to throw food away, ya know?

Been there done that. I hate to waste food as well. Hopefully you'll get some good out of the veggies tonight. Do a stir fry.

My only resolution this year was to reduce our food waste. So far it's not been too bad. Food costs are only going up and the pay checks are shrinking!

This is exactly why I'm no longer planning and buying for a whole week. I've reduced it now to just a few days, because the produce doesn't last long enough if you have a night backfire on you...which around here always happens.

Mini - Burgers with Rich Onion Gravy, Mash and Mushrooms BURGERS 750g/1½lb Mixta - 70% minced Beef to 30% minced Pork or Beef Mince 1 clove Garlic - finely chopped 45g/1½oz Spring Onion - finely chopped 1tbsp fresh Thyme Leaves - chopped 2tbsp fresh flat leaf Parsley - finely chopped Splashes Worcestershire Sauce - to taste 1 Egg Yolk - lightly beaten 45g/1½oz Butter Salt and freshly ground Black Pepper Apart from Butter, mix all ingredients together, season to taste and form into small balls; Flatten the balls, shape into mini - burgers about 2½in/6cm in diameter and place on baking tray; Put tray in fridge and chill burgers for 30 minutes to an hour or so; Melt butter in frying pan, add the burgers and cook on medium heat; When sufficiently browned on one side, turn over and cook steadily until meat just cooked through with juices running freely and clearly; Serve. ½ ONION GRAVY 30g/1oz Butter 1 large Onion - sliced 200ml/7fl oz Red Wine 100ml/3½fl oz Beef Stock 1tsp Dijon Mustard Salt and freshly ground Black Pepper Heat the butter in a frying pan on a low heat, add the onion and cook for some 30 minutes or so, stirring occasionally, or until the onion is golden-brown but not burnt; Reduce heat, pour in the wine and stock and allow to simmer for some 20 minutes or so, or until the liquid has reduced by half; Stir in the mustard and season, to taste, with salt and pepper; Pour into large serving sauce boat MASH 700g/1½lbs Potatoes - peeled, sliced, cooked, drained and dried out a bit 75ml/2½ fl oz Milk or as required Salt and freshly ground Black Pepper Mash everything together into a still with some body, smooth mash Season to taste and serve MUSHROOMS 250g/80z Button Mushrooms - cleaned and quartered 45g/1½oz Butter 1tbsp Extra Virgin Olive Oil Salt and freshly ground Black Pepper Melt the butter and heat the oil in pan, add the mushrooms and cook on medium heat, stirring occasionally, for some 4 minutes or so until golden and tender but still with some bite; Season to taste and serve

In a soup mood again. Rainy and cold here today. I've got 3 large bone-in breasts, so I'll make my own broth versus the boullion cubes.

I had a cold over Christmas, not the worst one ever, but I swear it came and went for 3 weeks or more. Hope you can get rid of yours soon girls!

I was craving polish sausage & kraut the other day so tried this recipe..http://allrecipes.com/recipe/polish-sausage-kraut-skillet/detail.aspx...It took care of the craving but made a ton(should've made 1/2 but my eyes were bigger than my stomach that day). It's very different, not bad just different, & I'm not sure leftovers will get eaten but they're going in the freezer today.

Two things. First; I didn't expect any response for this fare, Lisa. Second; I didn't know there was such a thing as a recipe for sausage and kraut! That, actually, looks pretty durn good. Thank you! ... What I do is, saute one medium onion cut in thick rings and long julienne of red bell pepper in two tbs of butter. When transluscent, add kraut and simmer uncovered until kraut begins to brown and remove from heat. Then, I grill the sausage on a stovetop grill or out door grill and lightly blacken. Then I cut into 1" chunks and add to kraut and reheat to serving temperature. Occasionally, I will add thousand island dressing to the kraut mixture.

No, it's not cheap! I can't bring myself to buy it cuz I'm not even sure I'd like it or find it necessary in most dishes. lol
