Black Beans and Rice

White rice, garlic and onion is cooked in a nice vegetable stock for about 20 minutes. Black beans, cayenne and cumin are added to the pot, given a stir ...and that's it. Black Beans and Rice for six.

I have absolutely no idea but Happy Last 2012 Sunday to you too! It's a beautiful Sunday here with everything laced in white. I just wish I didn't have to shovel it! :)

Dec. 30, 2012 4:35 am
I hear you Deb. I'm sitting here looking out the window thinking the same thing. My husband has been out since two in the morning plowing so I guess it's only right if I shoveled the drive way.

Happy last Sunday of 2012, glad to see the year coming to an end. I shoveled yesterday for 1 1/2 hours yesterday. Including the sidewalks of neighbors on each side (still doing those random acts of kindness to honor CT school).

I have no idea what is for dinner, working on NYE appetizers. Just me and the hubby tonight, so probably just raid the fridge. Happy Last day of 2012 to everybody!

Corn flour, or masa harina, is available at many larger grocers. Here it blends with corn meal, sugar, butter and cream in this luscious pudding-cake.

New Years Eve we'll probably munch on appy's. It's our traditional game & appy night & then mom falls asleep on the couch around 9 :) I don't have our menu fully planned but the mozz sticks & a summer sausage/cheese/cracker tray for sure. I'm also making punch & the kids have non alcoholic champagne for midnight.

Baked Haddock

Haddock (or other white fish) is lightly breaded and baked. Parmesan adds a nice flavor. Quick and easy to prepare, it's a nice alternative to deep frying.

Happy Sunday. Today I am doing this baked haddock for my parents and me. I have some nice pork chops for hubs and daughter who don't like fish. I have some rice pilaf and carrots to go with it.

this will be the 1st time I've actually had their steaks. The rest was hotdogs, burgers, cheesy potato puff thingies, marinated salmon, polish sausage, stuffed baked potatoes(haven't tried yet), & caramel apple pie dessert things(haven't tried yet). Hubby liked the hotdogs but they were all beef dogs, which I can't stand. Burgers were incredibly dry, even just barely cooking them til warm, salmon was just ok, sausages were tough, potatoes tasted "fake". Just not impressed.

We were gifted some Omaha steaks years ago and we thought they were very mediocre. Kansas City Steaks are much better if you're looking for that sort of gift.

Tomorrow we are going to a friends house. I'm making these today because I'm the only loser in my house that has to work tomorrow. I'll make them today then throw them in a crock pot with sauce so tomorrow they just need to be heated. Bringing little finger rolls to go with them.
