Good morning. Lack of planning seems to be rampant! I am making country style bbq ribs today with scalloped potatoes. Beyond that, it is anyone's guess. Tomorrow is fajitas at my parents and Christmas is enchiladas with my in laws. Seems to be mexican theme this year at both places! After that I just don't know!

Sherri, one of my sisters did a Mexican buffet on Thanksgiving and it went over very well. i noticed she is sticking with a traditional Christmas dinner however.

I love theme dinners & I love to mix things up on the holidays too.....that is, until my mom decided to do prime rib 1 year. Now she try's to get out of it every year & my dad & I won't let her :)

Haddock (or other white fish) is lightly breaded and baked. Parmesan adds a nice flavor. Quick and easy to prepare, it's a nice alternative to deep frying.

Hi everyone. Tonight we will be celebrating Christmas at mom's house with relatives and family friends. Mom's cooking a big dinner with a roast and baked stuffed shrimp. This Haddock will be my contribution to tonights dinner.

Tomorrow I'm making a ham dinner at my daughter's request. I'm doing this cherry glaze on it. I'm serving it with mashed potatoes and corn. Also I'm doing an apple pie and we have some vanilla ice cream to make it a la mode. I must admit it's a frozen Sara Lee pie. I just didn't feel like making one.

Tomorrow we head to my cousin's for Xmas Eve. I'll be bringing desserts (Gingerbread Cake with Lemon Glaze, Chocolate Trifle, my aunt is making apple pie and a tray of cookies and candies I'm making today) and appetizers (Blue Cheese Bacon Stuffed Mushroooms, BBQ Bacon Ranch Dip, Shrimp cocktail, Double TOmato Bruschetta, Red Potato Bites adn cheese and crackers). I feel a lonnnnnnnng day ahead of baking and cooking.
