Going to the Legion with my parents tonight. They are having a Chinese Christmas Auction, so we told them we would go along. Dinner will be fish, chicken, cole slaw, salad, rolls and potatoes 3-ways. No school for the next 2 weeks. YiPpIe!!!

I'll be making the challah today for the "Creme brulee french toast." If I didn't make that for Christmas brunch, the world really would end according to my family & friends.

Microwave Peanut Brittle

Salted peanuts in a sugary, crunch candy. All the cooking is done in the microwave, then just pour it onto a cookie sheet, let it cool, break it off and eat it.

Hi Lucky and Molly- I have made this one a few times and its awesome! I believe its a custom version of the one above. You do have to spread it quickly and it is very thick. But its so good!

I melted some things the first time making this years ago. 1) Have EVERYTHING measured and ready to go. 2) DO NOT have anything plastic around, if you reach for a spatula, it WILL melt! 3) It helps to have a second person holding the hot dish while you spoon the batter onto a cookie sheet. 4) Move the cookie sheet to spread the mix, if you try to spoon it, holes will form because it will cool too quick. Oh 5) Hide the end result from everyone until you are ready to serve, it is addictive!

This is really good; I love it - I also throw melted or softed chocolate on it too - or chips if its still hot and it will melt nicely. Always room for chocolate....

Latecomer again this morning! Going to work on a transcript in my home office for maybe a couple of hours and then I'm going to tackle the FRUITCAKE! Waited to get my grocery list as my last stop yesterday at my local Food Lion and they didn't carry candied cherries or candied pineapple! So improvising with Maraschino cherries and dried pineapple. Wish me luck!
