Blue Cheese, Spinach Meat Loaf Muffins

Using a large muffin pan allows the mini meat loaves to cook faster and makes portion sizing easier, plus your kids won't know you hid some veggies in there too!

It took all summer to grow your tomatoes, now use a slow cooker to make them into a versatile tomato sauce flavored with sauteed onion, garlic and bell pepper, and seasoned with oregano, basil, parsley, sugar and tomato paste.

Not sure if we'll have it this week or not, but I made a batch of this up. Tastes pretty good, so I'm excited to add some spaghetti and meatballs to it :)

Roasted jalapenos, onion and a few secret ingredients make these burgers spicy and irresistible. The manly man burger (not for wimps), great for NFL tailgating.

Horseradish Mustard Dip

Submitted by: Shirley Glaab
A tongue-tingling blend of zesty flavors comes together in Shirley Glaab's versatile vegetable dip. 'This is also great on ham, turkey or roast beef sandwiches,' she suggests from Hattiesburg, Mississippi, 'I stir a little into my potato salad, egg salad and tuna salad, too.' To suit more timid tastes, cut the horseradish back to 2 teaspoons.

Grilled chicken is on the agenda too, with some baked potatoes. After that, I'm not so sure since we will have a friend staying with us for a week starting Wednesday. We're going deep sea fishing on Saturday, so I see a lot of fish in our future!!! Have a great week everyone!
