I created this after trying numerous cheesy broccoli soup recipes. I think the dijon mustard is the key to this soup. I sometimes add more cheese, dijon, and fresh cracked pepper to taste and those are things you can easily tweak to your liking. I recommend using only shredded cheese, not processed cheese in this recipe. Serve with some fresh french or sourdough bread or breadbowls and enjoy!
