A hard but chewy candy made by cooking sugar, water (or cream) and usually butter. Depending on the recipe, a toffee mixture may be cooked to anywhere from 260° to 310°F on a CANDY THERMOMETER. Other ingredients such as nuts or chocolate are sometimes added.

Why do some toffee recipes call for the addition of an acid like vinegar or cream of tartar? (yeah i know, "It makes the sugar crystalize properly" but what does that mean? I just made some toffee and added vinegar, it was really good. what would it have been like if i hadnt added it?
