supreme sauce
An extraordinarily rich mélange made by combining equal parts
VELOUTÉ SAUCE and chicken or veal stock with mushroom-cooking liquid and heavy cream, and
REDUCING the mixture by two-thirds. The sauce is finished by whisking in butter and cream.
