potato flour

Also called potato starch, this gluten-free flour is made from cooked, dried and ground potatoes. It's used as a thickener and, because it produces a moist crumb, in some baked goods.

Potato flour is extremely different from Potato starch. Although both are made from potatoes, potato flour is NOT usually used for baking, but is used for thickening such as gravies or added sparingly with rice flour. Potato Starch is used for baking, but usually whit a combination of other flours such as rice flour and/or corn starch. DO NOT confuse the two, they are entirely different when used for baking such as in a Gluten-free recipe. Substituting potato flour for potato starch will result in a dry bread, or a mistake.
