[ LEHS-uh-thihn ]
A fatty substance obtained from egg yolks and
LEGUMES, used to preserve, emulsify and moisturize food. Lecithin-vegetable oil sprays (available in every supermarket) can be used instead of high-calorie oils for greasing pans and sautéing foods.
