fried rice

An Asian dish of rice that has been cooked and refrigerated for a day before being fried with other ingredients, such as small pieces of meat and vegetables, and seasonings such as SOY SAUCE. An egg is also often added to the mix. The name of the rice depends on the main ingredient (besides rice), such as "chicken" fried rice, "shrimp" fried rice and so on.

I have tried unsuccessfully many times to make fried rice and follow directions precisely...yet it always comes out mushy! What am I doing wrong as I use only a minimum of soy sauce?

use less water & use a rice cooker. If you use one cup of rice use 1 3/4 cups of water

To keep your fried rice from being mushy, ALWAYS use leftover cooked rice. That's the secret!
