dashi
[ DA-shee ]
Used extensively in Japanese cooking, dashi is a soup stock made with dried bonito tuna flakes (
katsuobushi; katsuo-bushi ),
KOMBU and water. Dashi-no-moto is this stock in instant form; it comes granulated, powdered and in a concentrate.
