butternut squash

This large, cylindrical winter SQUASH looks rather like a pear-shaped bat. It's 8 to 12 inches long, 3 to 5 inches at its widest point and can weigh from 2 to 3 pounds. The color of the smooth shell ranges from yellow to camel; the flesh is sweet and orange. It can be baked, steamed or simmered. See also SQUASH.

I have found that the pumpkins grown here in England are too watery for a good pumpkin pie or pumpkin loaf but a butternut squash works just as well!

a local apple farm also had squash for sale and on the stand it said: Don't peel all those butternut squash, cut in half, empty the seeds, cut in half, place in a greased pan and bake about 40 minutes in a 350 deg.oven, it's a lot easier than peeling, and with old aching hands, a blessing in disquise.

What is the best way of extracting the insides (for soup)? I am sick of trying to peel these guys... Thanks

I just cut it into chunks, peel and all, and then cut off the skin.
