Found off the Atlantic and Gulf coasts, the small (average 8 ounces), high-fat butter
fish has a tender texture and a rich, sweet flavor. It is usually sold whole and is sometimes smoked. Butter
fish can be broiled, baked, grilled or sautéed. Depending on the region, they're also known as dollar
fish, Pacific pompano and pomfret. See also
