Also known as blood pudding and in Ireland as black pudding, this large link SAUSAGE is made of pig's blood, suet, bread crumbs and oatmeal. Almost black in color, blood SAUSAGE is generally sold precooked. It's traditionally sautéed and served with mashed potatoes. See also SAUSAGE.

Blood sausage was made by my grandmother when I was a young boy,55 years ago, a Pig was slaughtered at home,we lived in a farm they would take the intestines wash them and boil them, and stuffed them with,pig's blood, pork fat, rice, onions, and wheat or oatmeal& spices,and cook them, then we fried them we eat it with rice and fried eggs,I love them still today.
