Full-bodied and rich, Cabernet can have flavors of blackberries, plums, and cassis. Time in oak barrels introduces flavors of vanilla, cedar, chocolate, and coffee. Beyond its home base in Bordeaux, where it's typically blended with Merlot (and other grapes), Cabernet Sauvignon does very well in California (particularly Napa), Washington state, Chile, and Australia. Some New World Cabernets are blended in the Bordeaux style, some stand alone as a single varietal. Australia is doing well blending a bit of Shiraz into their Cabs.
Cabernet Sauvignon is a classic pairing partner for meat dishes like beef and lamb. Nothing's better than a simple grilled cheeseburger and a Cab.
