I think that this has to be one of the most helpful videos on your site. It takes the fear out of baking cheesecakes because it illustrates how all is not lost if your screw up.

Fantastic video, my cheesecake is in the oven and I panicked, not because of a crack but because it has raised. I am looking forward to pulling it out after it cools. I did not realize you could be so rough. Thanks again.

Thank you sooo much! I now know that I can squish the cheesecake to reduce the crack after it has baked but can you do it after it has been in the refrigerator?

Hi, My daughter bakes cheesecakes all the time and hers never crack, she leaves the cake in the oven after the baking time and slightly opens the oven door and leaves the cheesecake in the oven till it is completely cool.... Her cheesecakes look picture perfect.....
