I have been baking my Thanksgiving turkey with this method for years and it works so well, but I never thought about cooking whole chickens throughout the year like this...what a wonderful idea!

My husband has a signature dish, the only thing he can cook succefully, He cooks chicken breasts this way, wrapped in bacon, then slices each breast, into large cubes, bacon still on the chicken, then adds to a rich, creamy pasta bake!!!! It is sooooo delish, and very, very more-ish.

Nothing new about wrapping chicken or turkey in bacon. I have done it for years, my mother before me and her mother before her. This is an excellent way of keeping the bird moist. If I am cooking just breasts, I "pin" the bacon on.
