Champagne and sparkling wines are so synonymous with celebration and toasting that they are almost completely overlooked as a wine to be served with food. But they’re actually very food friendly. Their acidity keeps them fresh and lively, keeping the palate on the alert, and their lowish alcohol level doesn’t overwhelm the food or the foodie.
Though sparkling wines imply fancy and sophisticated--Champagne is a classic match with caviar, for example--they also pair perfectly well with low-brow snacks like salty potato chips, popcorn and fried foods like fish-and-chips.
Champagne is sparkling wine from the Champagne region of France. It’s the cream of the crop (and you’ll pay for its pleasure). If you want a less expensive French sparkler, look for wine labeled crémant. In Italy, inexpensive Prosecco is a smart choice. Spain offers Cava--a good deal. And in the United States, sparkling wines are coming from California, Oregon, Washington state, and even from less well-known places like New Mexico.
