I guess suspending the chicken above the liquid is the secret here. My whole chicken just disintegrates in the past. will definetely try.

If you raise the bird by layering the veggies under it, there is less chance there will be uneven cooking and you only have to open the top once! I've done it this way for years with much success and three boys and a man who devour every morsel.

My husband and son love food cooked in the crock pot. I agree that you can prop the chicken on vegetables and not have to use the foil. I have never used the lemon halves inside the chicken.... would someone tell me about that?

i cant imagine that in 30 minutes the veggies put in will be cooked.. and why the foil??,just place the veg 1st and then the chicken, i love fresh sage and thyme from the garden

I have to agree with Christine and say I don't think the veggies put in for 30 mins will really cook, unless you like them almost raw. Some people do, so perhaps just a matter of preference. My favorite spice for crockpot-roasted chicken is a good sprinkling of Santa Maria seasoning from the Santa Ynez area of California. Yum!!

Great idea with the foil,but wasteful i guess too! But this sounds perfect,I will do this recipe this week.Slow cooking is perfect for busy people.Definitely if you want the vegies to be fully cooked put in prob an hour before!Thank for cool tips:0)

When I do a roast, chicken in the slow cooker; it says to put in tatoes & carrots on bottom; but when the time is up 6-8 hrs on low..my carrots and tatoes aren't done. What am I doing wrong?

I'm going to try it. I never have tied the legs or used tinfoil. So, I pierced baking potatoes and wrapped them in tinfoil, placed them on the bottom, and put the stuffed seasoned chicken, with legs tied on top. I'll let you know how it turns out.

I tried this on my new programmable slow cooker with a probe. I put diced sweet potatoes and onions below the chicken and did not use any wine or liquid of any sort. Yet at the end of it, when I lifted the lid, the chicken was floating in water and fat!! Where did all that liquid come from???

TIZ - sounds like there was water injected into your chicken. Strange but true. It could have been broth, but it's usually a flavor enhancer like MSG.
