Potatoes, Redeemed

A recent study may help take potatoes off the nutritional blacklist.

Critics complain that white potatoes spike blood glucose, promoting diabetes and heart disease.

True, but USDA researchers now say that spuds have as much antioxidant activity as other disease-fighting vegetables. In fact, a 10.5-ounce baked russet potato delivers as much antioxidant punch as 2 cups of cooked broccoli, 1 1/2 cups of cooked asparagus or 1 cup of cooked red cabbage.
