Native to the Pacific Coast, the Olympia
OYSTER is found primarily in the Pacific Northwest around Washington's Puget Sound. It's very small, seldom exceeding 1 1/2 inches. The Olympia has an excellent flavor and is a favorite for eating
ON THE HALF SHELL. Because they are so small, it takes a fair number to satisfy most
